
Thai lime and chilli lettuce parcels

Ingredients
Main dish
Lean mince
2 garlic cloves or 2 tsps of garlic puree
1 tsp of ginger paste
2 chilli’s or 3 tsps of chilli paste/pre-cut chilli
1 tbsp of fish sauce
3 tsp soy sauce
1 tsp Worcester sauce
1 lime (juice and zest)
2 baby gem lettuces
Dressing
1 tbsp soy sauce
1 lime (juice)
2 tsp sesame oil
7 tsps of Worcester sauce
2 tsps of fish sauce
1 tbsp olive oil
1 chilli or 2 tsps of chilli paste/pre-cut chilli
How to make it:
1. Mix all dressing ingredients together in a serving bowl and put to one side
2. Wash lettuce leaves and leave to drain
3. Cook mince in a pan until crisp
4. Drain the fat from the mince and put mince to one side
5. Wipe out pan and add tbsp toasted sesame oil
6. Add garlic, ginger, and chilli and fry for 2 minutes (or until browning)
7. Add mince to the pan and mix
8. Add soy, Worcester and fish sauces and juice and zest of lime
9. Serve mince mixture inside of the lettuce parcels with a spoonful of the sauce
Tips and Ideas
Try adding chorizo or bacon to the mince mix.
Add a little sprinkle of cheese to your parcel.
Try experimenting with different meats or fish.
