
Chicken Fajita Lettuce Wraps

Ingredients
The main dish:
100g Red bell peppers
100g Yellow bell pepper
100g Green bell pepper
1x 198g tin of sweetcorn
1x red onion
3x good size chicken breasts (roughly 150-200g)
1tbsp extra virgin olive oil
2x Romaine or Baby Gem lettuces.
Cajun dressing:
1tsp sea salt
2tsp garlic granules
3tsp smoked paprika
.5-1 tsp of cayenne (depending on how spicy you like it)
1tsp onion powder
1tsp ground black pepper
1tsp dried oregano
1tsp dried thyme
How to make it:
For the fajitas:
1. Slice the chicken breasts and put them in the frying pan on a medium heat.
2. Slice the peppers thinly, and dice the onion before adding them to the frying pan with the sweetcorn.
3. Whilst this is cooking, wash the baby gem lettuces, grate the cheddar and prepare the Cajun powder (step 4)
4. Combine all of the Cajun ingredients into a small bowl and mix well.
5. Pour the Cajun seasoning over the mixture and stir regularly ensuring that it is all coated in the powder.
6. Split the mixture into 3 or 4 and serve with the lettuce leaves and grated cheese.
Tips and Ideas
Serve with lemon mayonnaise (see recipe) to help cool it down and add a citrus punch to your cajun! A sprinkling of cheese always helps too.
