
Egg-based pizza

Egg based pizza or calzone (try it before you dismiss it)

Ingredients
8 large eggs
20ml of milk
Tomato puree/ sundried tomato puree
Salt and pepper to taste
250g of cheddar
Extra virgin olive oil
A selection of meats or veggies dependent on your preferences (just keep an eye on the calorie count)
Mixed herbs
How to make it:
Stage one: the base
1. Whisk up the eggs up in a bowl, and add the milk, salt and pepper before mixing it all together.
2. Put a medium to large frying pan on a gentle heat and pour in 1tbsp of extra virgin olive oil.
3. Pour roughly a quarter of the egg mixture into the frying pan ensuring that it covers the entire pan.
4. Cook on low, giving the pan a gentle shake every now and then to ensure the base doesn’t stick.
5. Whilst the pizza base is cooking, prepare the toppings that you wish to add
6. Once the base is nearly cooked you can:
a) Flip the pizza base using a spatula to cook the other side
b) Finish it off in the oven for a couple of minutes
7. Once the base is cooked, place it in between two pieces of kitchen towel and pat it dry to help remove any additional oil.
8. Repeat for the other 4 pizza bases
Stage two: the fun part!
1. Spoon a thin layer of tomato puree onto the pizza base
2. Add roughly half of the cheese to the four pizza bases
3. Layer the pizza with whatever toppings you have chosen
4. Finish off with the remainder of the cheese and a sprinkling of mixed herbs
5. Cook in the over for between 5 and 10 minutes until the toppings are hot and the cheese is melted!
Finally:
Slice it up and enjoy!!

Try folding the pizzas in half before placing in the oven to create a calzone.
